My ito list, thoughts?

Itsunagi Ito
Kaihime Ito
Kenzo Ito
Saburo
Sakura
Satoshi

That's my current list at 55 rice. I don't have saburo yet and haven't tried him but decided i wanted too. Any thoughts on this or teeing to fit vipers in?

I'm not great at putting lists together and mostly play at 42 Rice. Trying to make  as few changes as possible:

With all those beatsticks (Itsunagi, Kenzo and Satoshi) and only one ashigaru, I'd be tempted to drop Satoshi (he won't be using his Battle Stations efficiently) for vipers and something else. 2 vypers and a 3 Rice on special cards or one viper and maybe Kazuhiko to help Sakura or Kaihime out, plus 2 Rice on special cards.

I'm sure others will have far better suggestions!

I prefer Satsuki over Sakura (if i  had to take  only one) as i feel one offers more for the same price, but it depends what you want them to do - if it's just to channel ki  to the power hitters then it doesn't matter i suppose.

Beyond that i'm still new to Ito and the game  as a whole so some of the more  experienced "inmates" here will most  probably be able to offer more lol

Four Samurai makes me happy, always does, even if it isn't the most effective build. Anyway I'll take Sakura over Satsuki if I'm only bringing one Shisai anyway, because without Force of Will there's not too much point in their Ki feats and I mostly use her to Focus/Channel and sometimes turn idols. Used like that they're exactly the same and Sakura's model is just a lot nicer.

Fleafa's right about Satoshi, without Ashigaru to Order he's not that great, Masunagi would be a better investment of the rice because Masunagi is a proper beast. Itsunagi is expensive and although he's great he's the first model I'd drop to get Vipers and maybe Yuui? Hitoshi is also a good choice for an excellent cheap model. That's really what you need, more bodies. While a group of excellent fighters will probably win the fight you need scenario points to actually win the game.

Vipers are brilliant though, absolutely excellent. I always bring at least one, two if possible. The tactical implications of one or two models behind enemy lines in the second turn is great, and if necessary they can move anywhere on the board very quickly.

I have to admit Satoshi might be my favorite model. I've never used that order and he tanks for me so hard. I have trouble not including him in every list. It gives me chills!

I prefer Saburo over Takeji.  "Lurker" is a very useful Ki feat, and the built-in Feint (1) tends to get more mileage over "Cleave".  He's also got side-step defence (0).  YMMV though, I believe most people prefer Takeji.

Tamotsu is interesting, but lacking snake-parts is rather uninteresting to me.  On the other hand, he has Scout...

Yatsumata is an incredible model for holding down parts of the board.  Works incredibly well within the Blessed/Jade Witch warband, but once she's fighting, Yatsumata isn't moving so you'll need another good fighting model (typically Kenzo Ito).

I ended up buying the vipers, Saburo, and Satoshi; thanks for all your help. Now I own everything that came out up to masunagi Ito or takeji, whichever came first. Any tips on further purchasing? Thinking about getting the guys with brutal next.

You'll get much more out of Masunagi than Satoshi at the very least.  Though Satoshi is much better at taking hits, armour (3) still holds back a lot of damage on its own, and Masunagi is a much more pro-active model to bring to the table.  He's a psychologically (to the player) terrifying model to have on the table, the idea of the brutal (2) and martial prowess always lurk in the back of everyone's minds when they see him on the table.
